While I cannot legally post all the recipes I'll be baking from "The Bread Baker's Apprentice", I can and will post any yeast or non-yeast, mouth watering bread recipes of my own.

Mom's Texas Cornbread
2c. cornmeal
1c. flour
1t. salt
2T. brown sugar
3t. baking powder
4 eggs
2c. canned creamed corn
1/2c. vegetable oil
1-1/2c. cheese, grated
1 onion, diced
4-5 jalapeno peppers, diced (can substitute with green onions)
Mix ingredients together and bake at 350 degrees F. in a 13"x9" greased pan for 45 minutes or until nicely browned and the cornbread begins to pull away from the sides of the pan.
Banana Nut Bread (not cake)
1-1/2c. sugar
1/2c. butter
2 eggs
1c. very ripe mashed bananas
1t. vanilla extract
1t. baking soda
1/4c. buttermilk
2c. flour
1c. pecans, coarsely chopped
1/2t salt
Mix ingredients together and pour in a bunt pan or two loaf pans. Bake at 350 degrees F for 1 hour.
